The moonshine of choice in rural Haiti is called "klerin"- I'm not sure of the correct spelling. Here's a distillery in action- syrup from cane sugar, something added from cassava to start the fermentation process. Those barrels are actually hissing while they bubble. The end result smells like an industrial chemical but tastes not half bad, at least in this establishment.
